<P>PROBLEM TO BE SOLVED: To provide a potato fiber keeping its natural merits, having low content of sugar alkaloid, light color, neutral taste and flavor and low protein content. <P>SOLUTION: The method for preparing a potato fiber comprises (a) a step to wash a potato, (b) a step to remove solid foreign materials and rinse the water attached to the potato as necessary, (c) a step to mash the potato in the form of a pulp, (d) a step to separate the potato juice, (e) a step to remove starch and as necessary remaining potato juice to obtain a crude fiber, (f) a step to refine the crude fiber, (g) a step to mix with a preparatorily dried potato fiber and (h) a step to dry the fiber. <P>COPYRIGHT: (C)2008,JPO&INPIT |
