PROBLEM TO BE SOLVED: To provide composite confectionery including baked confectionery and marshmallow which are joined together and coated with chocolate, having a desired texture of marshmallow, with the occurrence of cracks in the chocolate coating suppressed; and a manufacturing method of the composite confectionery.SOLUTION: Composite confectionery includes: a baked confectionery sheet made from raw materials containing wheat flour, fat, sugar and egg; a marshmallow made from sugar and gelatin, placed on the baked confectionery sheet; and chocolate which covers the outer periphery of the baked confectionery sheet and the marshmallow. The baked confectionery sheet is impregnated with an alcohol-containing water. The baked confectionery has a specific gravity of 0.40 to 0.70 calculated excluding the water content. The marshmallow has a specific gravity of 0.13 to 0.28 calculated excluding the water content. The whole is sealed in a package. |
