PROBLEM TO BE SOLVED: To provide a method for producing a rice cracker which is less likely to be affected by supply situation of cuttlefish though the cuttlefish is a main raw material, thus making it possible to stably produce the rice cracker.SOLUTION: A method for producing a rice cracker includes: a paste making process S1 of separating an upper jaw plate and a lower jaw plate from a mouth ball of cuttlefish and then processing a muscle part into a paste state; a cutting process S2 of cutting a body of the cuttlefish; a kneading process S3 of obtaining a dough by kneading a main raw material composed of the pasty muscle part and the cut cuttlefish body, seasonings, and starch; and a firing step S4 of forming the obtained dough into a predetermined shape and then firing the formed dough. |
