PROBLEM TO BE SOLVED: To provide a bread dough capable of providing breads good in crispy texture even with a blend rich in oil content and sugar content, and a manufacturing method for bread dough capable of stably and simply manufacturing breads having such characteristics.SOLUTION: There is provided a bread dough by dispersing and/or winding small piece-shape plastic oil and fat into a bakery dough having an oil content of 9 pts.mass or more based on 100 pts.mass of starches.
