The present invention relates to a method for manufacturing an aged and fermented red ginseng extract using a G3 method and, more specifically, to a method for manufacturing an aged and fermented red ginseng extract using a G3 method, which can produce a new high-quality red ginseng extract that has never seen in a red ginseng extract prepared by a single process through an aged and fermented red ginseng extract with only the advantages of a red ginseng extract, a red ginseng concentrate, and a fermented red ginseng extract by washing, steaming, and drying fresh ginseng to make red ginseng, and mixing red ginseng extracts (G1-G3) prepared by three processes at an optimal ratio, wherein G1 is a red ginseng extract obtained by primarily extracting the red ginseng, G2 is a red ginseng concentrate prepared through the low-temperature aging and concentration processes, and G3 is a fermented red ginseng extract with an enhanced absorption rate of ginsenosides, which are active ingredients of red ginseng, through the fermentation, and to the fermented red ginseng extract manufactured thereby. |
