The present invention relates to an apparatus for drying a sea cucumber using a low temperature vacuum dryer capable of: shortening the time required for drying a sea cucumber, minimizing damage to the tissue of the sea cucumber in the drying process while maintaining the shape of the sea cucumber, providing an excellent restoring force, and increasing the commercial value of the sea cucumber by preventing alternation of the color. Provided is a method for drying a sea cucumber, which comprises the following steps of: inserting a sea cucumber into a vacuum chamber to applying vacuum pressure; and maintaining a vacuum state to dry the sea cucumber. |
