The present invention refers to a nutritional bar and its obtention process with a nutrimental balance in proteins, carbohydrates and fats. The invention contains from about 10% to about 11% of fiber, with the presence of polyunsaturated fatty acids, which help the digestive tract. The bar of the present invention has antioxidant properties that help to reduce the risk of diseases related to the metabolism of carbohydrates. The invention may be a good nutritional aperitif unlike the currently available snack type products. The frequent consumption of this bar may help to control the glucose levels as well as the weight.
