The present invention relates to a method for preparing pickled radish by using aronia. The present invention is to provide a method for preparing pickled radish by using aronia which has inhibited acidification and alteration, and has excellent functionality such as flavor, taste, color, and the like by adding an aronia extract containing anthocyanin having an excellent antioxidant activity to pickled radish. According to the method for preparing pickled radish of the present invention, the prepared pickled radish satisfies long-term storability and has excellent taste. In addition, the prepared pickled radish has crispy texture and is highly nutritious. Herein, a mixture is obtained by mixing materials at a weight ratio, thereby providing improved storability and natural sweet and sour taste for pickled radish. |
