The present invention provides a system for rapidly producing cut kimchi, to rapidly perform salting on materials of kimchi within one hour without damaging the materials of kimchi, and to allow a kimchi producing process to be continuously automated. The system of the present invention comprises: a cutting device for cutting a carefully selected material, which is loaded in a transfer conveyor and transferred, into 2 to 4 pieces, and finely cutting the cut material; a heat treating device for drying the cut material so that a temperature of the material reaches 35 to 60°C and the weight of the material becomes 80 to 95% of the original weight by heating the cut material; a brine cooling immersion device for immersing the material which has passed through the heat treating device in brine having a concentration of 3 to 25% maintaining temperatures of 0 to 30°C, for 10 to 40 minutes; a washing device for washing the material which has passed through the brine cooling immersion device; a dehydrating device for dehydrating the material which has passed the washing device; a seasoning mixing device for producing kimchi by mixing seasoning with the dehydrated material; and a packing device for packing the kimchi which is mixed with the seasoning. |
