PROBLEM TO BE SOLVED: To provide stable anthocyanin compositions, and methods to prepare such compositions.SOLUTION: A stable anthocyanin composition contains anthocyanin stabilizer for pH dependent degradation under a neutral or basic aqueous environment containing a compound having -SH group. The stabilizer is an inhibitor of conversion to chalcone of anthocyanin under a neutral or basic aqueous environment, e.g., cysteine. In the composition, anthocyanin is an anthocyanin extracted from bilberry, and a molar ratio of cysteine to anthocyanin is 0.1-10. |
