PROBLEM TO BE SOLVED: To solve the problem that, although phytic acid is used in fields of foods, medicine and rust prevention of metals as a chelating agent and a preservative, its aqueous solution becomes brown in a short time and produces dark brown precipitation and also deteriorates in chelating capacity, and the phytic acid aqueous solution with browning and dark brown precipitation is restricted in use, especially in food fields, from the standpoint of deterioration of the effectiveness and coloration.SOLUTION: A stabilized powder phytic acid composition is prepared by causing an emulsifier selected from polyglycerol fatty acid esters and polyglycerol condensed ricinolate esters to be contained uniformly in a powder containing phytic acid adhered to a sodium acetate powder. The phytic acid composition discolors little even after 6-month or longer storage, and an aqueous solution of the powder prepared at the time of use provides a coloration-free phytic acid-sodium acetate aqueous solution. The powder phytic acid composition suppresses odors and imparts good flavor to foods and improves quality when added to foods, especially food materials having individual odors and/or fishy smell, including animal flesh, bird meat, seafood, plant protein, fermented foods, oils and fats and fat-containing foods. |
