The present invention relates to a submergence detection sensor using optical fiber grating. The submergence detection sensor according to the present invention comprises: an optical fiber grating device in which the wavelength of an output signal changes by detecting the presence of immersion or leakage; and a coating layer formed on the outer periphery of the optical fiber grating device. As the coating layer is configured to be in a shrunk and hardened state by a heat treatment process, the coating layer of the optical fiber grating device is shrunk and hardened after the heat treatment process and then recovered by the immersion, and thus can accurately detect the presence of immersion or leakage by using a change in the wavelengths of the output signal outputted from the optical fiber grating device. |
