The present invention relates to mixed salt in high-nutrient color food, and a method for manufacturing mixed salt. The method of the present invention comprises: a fermentation step of adding salt for salting to a mixture of a variety of fruits and vegetables and seaweed, and fermenting the mixture; a primary grinding step of grinding the fermented substance gone through the fermentation step; a steaming step of steaming the primarily ground substance; a drying step of drying the steamed substance gone through steaming; a salt mixing step of adding and mixing the dried substance and salt at a ratio of 50 to 100 parts by weight of the dried substance with respect to 100 parts by weight of salt; a secondary grinding step of grinding the dried substance and a salt mixture and matching the size of the dried substance and the salt; an ultra-high pressure treatment step of sterilizing the secondarily ground substance gone through the second grinding step at ultra-high pressure; and a commercialization step of commercializing the treated substance gone through the ultra-high pressure treatment step. The mixed salt in high-nutrient color food according to the present invention has various nutrients by mixing color food concentrated with at least one for each type of a variety of fruits and vegetables and seaweed, greatly improves the nutrition of food by using salt with beneficial ingredients of fruits and vegetables and seaweed, and solves the problem of high salt meals by including a large amount of potassium ingredients so as to discharge sodium from the body. |
