The present invention relates to a color food sauce with a potassium ingredient, and a method for manufacturing a color food sauce. The method of the present invention comprises: a pretreatment step of removing impurities from raw materials including a variety of prepared fruits and vegetables and seaweed; a fermentation step of adding sugar or salt to the mixed raw materials after the pretreatment step, and fermenting the raw materials; a steaming step of steaming the fermented substance by providing steam to the fermented substance fermented through the fermentation step; a drying step of reducing the water content to 30% or less by drying the steamed substance after steaming; a grinding step of grinding the dried substance after the drying step to have a particle size of 10 mesh to 30 mesh; an ultra-high pressure treatment step of treating the ground substances gone through the grinding step at ultra-high pressure; and a commercialization step of commercializing the treated substance after the ultra-high pressure treatment. The color food sauce with a potassium ingredient according to the present invention has a good body absorption rate by including the fermentation step in a manufacturing process, has excellent quality safety by having a strong internal structure, has no change in a content ingredient during long-term storage, and solves the latest problem of high salt meals by including a large amount of potassium ingredients so as to discharge sodium from the body in ingestion. |
