PROBLEM TO BE SOLVED: To provide a packed beverage production method, capable of suppressing time deterioration of taste, flavor and appearance quality and the like of a drinking liquid due to heat which is applied to the liquid in a production step, or due to an influence of oxidation caused by dissolved oxygen in the drinking liquid, being excellent in taste and flavor balance, capable of reducing energy cost which is required during production and having a low environmental load.SOLUTION: The packed beverage production method comprises: a primary heating and deoxidation step of heating raw material liquid by mixing water whose temperature is higher than raw material liquids to the one or two or more kinds of raw material liquids including an extract of a plant body, and adjusting an amount of dissolved oxygen in a mixture of the raw material liquids and water; and a secondary heating and sterilization step of heating the mixture to sterilization temperature after performing the primary heating and deoxidation step, and holding the mixture for a constant period of time. In the primary heating and deoxidation step, the amount of the dissolved oxygen in the mixture is adjusted to be in a range of 0.1 ppm-3.0 ppm. |
