PROBLEM TO BE SOLVED: To provide a method for producing a frozen tea gruel maintaining the flavor and color characteristic of tea, excellent in texture and taste and easily capable of thawing it with an electronic oven.SOLUTION: Provided is a method for producing a frozen tea gruel including: a cooling step of rapidly cooling a white gruel boiled by the conventional method with a gruel soup to 25°C or lower; a mixing step of adding components originated from tea to the white gruel after the cooling and mixing them; and a rapid freezing step of rapidly freezing the gruel obtained by mixing the white gruel and the components derived from tea to -40°C or lower within 20 min. According to the production method, the frozen tea gruel in which the discoloration of tea is suppressed, the flavor and color derived from tea are maintained, being excellent in texture and taste and also easily capable of thawing under heating with an electronic oven can be provided. |
