PROBLEM TO BE SOLVED: To provide powdered oil and fat having remarkable oxidation stability, being superior in flowability and containing polyunsaturated fatty acid, and a manufacturing method thereof.SOLUTION: Powdered oil and fat are provided by mixing oil and fat containing polyunsaturated fatty acid and dried raw materials. When the gross weight of the powdered oil and fat is 100 parts by weight, at least (A) oil and fat containing polyunsaturated fatty acid of 1-70 parts by weight, (B) a dry matter containing protein of 1-70 parts by weight and (C) an excipient of 20-89 parts by weight are contained. A ratio between amino nitrogen concentration and total nitrogen concentration (amino nitrogen concentration/total nitrogen concentration) of the dry matter containing protein is 0.06-0.8. |
