The present invention relates to a fermented product using Sasa quelpaertensis Nakai, which can increase extraction yield, a biological activity ingredient, and appealability of the Sasa quelpaertensis Nakai, tea containing the fermented product, and a manufacturing method thereof. The manufacturing method of a fermented product using the Sasa quelpaertensis Nakai of the present invention comprises: a grinding process of grinding a selected leaf of the Sasa quelpaertensis Nakai; a sterilization process of spraying water to ground Sasa quelpaertensis Nakai powder, mixing the same, and sterilizing the same; a fermentation process of adding a fermentation strain into the sterilized Sasa quelpaertensis Nakai powder, and fermenting the same; a maturing process of maturing a solid fermented product lumped through the fermentation process; a drying process of drying the matured solid fermented product; and a roasting process of separating the dried solid fermented product into a small particle, and heating the same. The fermented product using the Sasa quelpaertensis Nakai and the tea containing the fermented product are manufactured by the manufacturing method. |
