The present invention relates to a manufacturing method of scallion cold noodles, and scallion cold noodles. The manufacturing method comprises the following steps: inserting 27 to 33 parts by weight of water and 5 to 9 parts by weight of scallion powder into a kneader; firstly operating the kneader; inserting 12 to 17 parts by weight of starch into the kneader; secondly operating the kneader; inserting 75 to 81 parts by weight of flour into the kneader; thirdly operating the kneader; passing batter gained through the previous step through a compressor, and extrusion-molding the same; and drying a noodle separated from the compressor, and cutting and packing the same. According to the composition, the method can stimulate visual and taste senses with a unique color and a flavor by adding the scallion powder into existing noodles, and gain an excellent effect of scallion. |
