PROBLEM TO BE SOLVED: To provide an ice cream manufactured without using material which causes allergy and having as high palatability as possible and rich flavor.SOLUTION: There is provided an ice cream selected from a sherbet, ice candy and shaved ice, having good texture and flavor by containing water soluble pea polysaccharide of 0.05 to 5 wt.%. The ice cream contains fruit juice and/or fruit pulp of substantially 5 to 90 wt.%. |
