PROBLEM TO BE SOLVED: To provide a soft candy having a new palate feeling which is producible easily and efficiently by using only a kneading machine like a kneader, without use of an aeration dedicated apparatus like Hobart mixer, and combines chewability and an air feeling and its production method.SOLUTION: A soft candy contains gelatin and a sugar alcohol; the sugar alcohol is xylitol plus maltitol or xylitol plus reducing palatinose; and the specific gravity of the soft candy is 1.2 g/cc or smaller. A production method of a soft candy includes (1) a step of charging xylitol plus maltitol or xylitol plus reducing palatinose into a kneader and heating, (2) a step of adding gelatin swollen preliminarily with water and mixing with stirring, and (3) a step of formation. |
