PROBLEM TO BE SOLVED: To provide a method of manufacturing a fat composition containing a large amount of a triterpene compound by efficiently extracting triterpene compound such as maslinic acid from olive plant pulverized product without using a large quantity of solvent.SOLUTION: In this method of manufacturing the fat composition containing triterpene compound, 30-60% (v/v) aqueous solution containing 1-3C lower alcohol is added to an olive plant pulverized product and an alkali metal hydroxide is added to make it at 0.05-0.20 M, and the fat containing triterpene selected from the group consisting of maslinic acid, oleanolic acid and their salts are extracted from the olive plant pulverized product. |
