摘要 Disclosed is a method for preparing dehydrated potato materials from frozen potato tissues through the isolation of individual potato parenchyma cells by pectin hydrolase treatment. A method for preparing dehydrated potato materials according to the present invention comprises the following steps: (a) washing, peeling, fine-cutting and pre-treating potatoes; (b) treating the pretreated potatoes by pectinase treatment; (c) making an enzyme-reacted mixture gone through the pectin hydrolase treatment pass through a standard screen to obtain potato parenchyma cells; and (d) drying the potato parenchyma cells obtained in step (c) to prepare dried potato parenchyma cell materials. According to the present invention, as normal and frozen potato tissues are gone through pectin hydrolase treatment, the method can: enhance the processing suitability of potato powders and granules; increase the utilization in food industry; and save energy and labor due to a simplified production process. In addition, the method of the present invention can provide dried potato parenchyma cell materials of good quality.
