A method for making a milk product (e.g. a yogurt) comprising adding an effective amount of an N-linked glycosidase and/or an O-linked glycosidase to milk.

1. A method for producing a yogurt product, comprising:
(a) providing a milk substrate; (b) treating the milk substrate with an enzyme having N-linked glycosidase activity; and (c) fermenting the milk substrate with a fermenting microorganism to produce the yogurt product.
