The present invention relates to a manufacturing method of Cirsium setidens Nakai noodles and Cirsium setidens Nakai noodles. According to the present invention, a manufacturing method of Cirsium setidens Nakai noodles can manufacture Cirsium setidens Nakai noodles with excellent smell and taste of Cirsium setidens Nakai by putting a Cirsium setidens Nakai extract and a Cirsium setidens Nakai enzyme diluted solution in flour and kneading. The smell and the taste of Cirsium setidens Nakai can be improved by aging after boiling Cirsium setidens Nakai. According to the present invention, a manufacturing method of Cirsium setidens Nakai noodles is capable of making mouthfeel of the cooked noodles chewy by refrigerating and aging paste containing the Cirsium setidens Nakai extract or the like for 12 hours. |
