According to the present invention, a manufacturing method of Cirsium setidens Nakai noodles can manufacture Cirsium setidens Nakai noodles with excellent smell and taste of Cirsium setidens Nakai by putting a Cirsium setidens Nakai extract and a Cirsium setidens Nakai enzyme diluted solution in flour and kneading. The smell and the taste of Cirsium setidens Nakai can be improved by aging after boiling Cirsium setidens Nakai.
