PROBLEM TO BE SOLVED: To provide a large quantity of safe bamboo sake having a flavor, aroma and umami inherent to bamboo in a stable manner, unconventionally using bamboo as main raw material to manufacture an alcohol liquid by fermentation with koji and yeast and aging, the bamboo including sprouting bamboo shoots and grown unused bamboo for enhancing the demand for bamboo and preserving natural environment of bamboo forest.SOLUTION: Bamboo is cut and crushed into bamboo powder. The bamboo powder mixed and agitated with various koji molds and various yeast fungi under heating conditions for proliferation. The mixture is left standing in a room for a proper period. The cultured fermented bamboo powder and water are fed into a tank container for culture fermentation at a proper temperature for a proper period. After mutual growth fermentation and equilibrium complex fermentation, unrefined sake is obtained through brewing and aging. Impurities contained in the unrefined bamboo sake are filtered. Alternatively, the unrefined bamboo sake is distilled and diluted with water to have a specified concentration. The bamboo sake is thus manufactured. |
