<P>PROBLEM TO BE SOLVED: To provide a method of producing freeze-dried noodles that can be rehydrated in hot water to be edible in a short time, to be easily loosened, and to have good texture. <P>SOLUTION: The method of producing freeze-dried noodles includes the steps of: boiling noodles in a trehalose solution with a concentration of from 3 to 20 wt.%; packing the boiled noodles into a container and adding water therein to immerse the noodles in water in the container; and vacuum freeze-drying the noodles in such a state. The noodles preferably is kept below the water surface upon immersing the noodles in water in the container.
