A baking fermenter according to the present invention comprises: a case made of retinispora material, and constituting a fermenting chamber having a particular size; a moving rack having fermentation plates disposed in upper and lower sides thereof to arrange molded bread doughs; a door opened and closed to feed and discharge the moving rack in and from the fermentation chamber; a stainless steel punched panel upwardly and downwardly formed in the fermentation chamber including the case made of retinispora material, and having holes uniformly punched in overall surfaces excluding a door side part; a rice straw panel disposed on an inner surface of the punched panel; a ㄷ-shaped humidifying device formed in a lower side of the punched panel; a fermentation chamber controller for controlling humidity and temperature in the fermentation chamber; and a fermentation chamber humidity controlling damper formed in one upper side of the case, connected with the fermentation chamber, and opened and closed by the fermentation chamber controller. |
