摘要 The present invention relates to a method for producing a salted Pollack roe pork cutlet using pork and salted Pollack roe, and a salted Pollack roe pork cutlet produced thereby. In particular, the method for producing a salted Pollack roe pork cutlet comprises: a pork sirloin cutting step; a pork sirloin aging step; a dredging step; a bread crumbing step; and a frying step. When a salted Pollack roe pork cutlet is produced by using the method according to the present invention, aging is performed by using salted Pollack roe and an onion mixture, so seasoning sufficiently permeates without additionally mixing seasoning and a production process can be simplified. Seasoning is suitably used, so bad tastes of pork are removed and pork sirloin becomes soft to be easily chewed. Also, unsaturated fatty acid provided by salted Pollack roe makes the salted Pollack roe pork cutlet become nutritionally excellent. In particular, when the salted Pollack roe pork cutlet is used for school feeding, even children who have repulsion to pork can enjoy the salted Pollack roe pork cutlet irrespective of kind of sauce, and a nutritionally improved pork cutlet can be provided.
