The present invention relates to a method for producing fermented herbal chitosan, which includes: mixing herbs with sugar; fermenting the same after inoculating with lactic acids; stirring and mixing chitosan and fermented vinegar; and then mixing with fermented lactic acid products after a surface treatment. In addition, the present invention relates to food containing fermented chitosan produced by the method, a food additive, cosmetics for preventing wrinkle, or an antibacterial composition. The present invention activates chitosan having large molecular weight and low water-affinity availability with fine-grain dispersibility by means of a method of the present invention through fermentation of herbal lactic acid and acetic acid bacteria, thereby, being applicable for various fields including food, the food additive, the cosmetics for preventing wrinkle, or the antibacterial composition. |
