The present invention relates to a madeleine cookie containing a dandelion enzyme resolvent and a preparation method thereof, and more specifically to a cookie which is prepared by obtaining an extract by crushing the stems or leaves of dandelion and by using a dandelion enzyme resolvent manufactured by a treatment of cell wall degrading enzyme so that the cookie has improved color, taste, and scent with excellent mechanical properties. In addition, since users can intake useful ingredients in the dandelion, the cookie can contribute to users′ health. |
