[Problem] To provide: a color adjustment device that adjusts the color of a color image in order to cause an object appearing in the image to be more easily visually distinguished; an image display device; and a color adjustment method. [Solution] Parameters define a chroma range to be adjusted within the pre-color-adjustment chroma, and a range of post-color-adjustment chroma change compared to the pre-color-adjstment chroma. The color adjustment device (1) calculates the chroma from an image signal, calculates a post-color-adjustment chroma that is in accordance with the pre-color-adjustment chroma in a manner so as to increase or reduce the chroma in the range stipulated by the parameters to a level stipulated by the parameters, and generates an image signal from the post-color adjustment chroma. By means of stipulating the parameters in a manner so that the chroma difference for a specific plurality of colors becomes greater after the color adjustment, the color difference of a plurality of objects appearing in the image becomes greater, and it becomes easier to visually distinguish the plurality of objects appearing in the image after the color adjustment.
