1. A method for producing a yeast extract, comprising:
a) adding to yeast comprising protein a protease having at least 95% identity to SEQ ID NO: 1; and b) incubating so as to hydrolyse the protein, and wherein the protease is present at a concentration of between 0.001-1 mg enzyme per g yeast dry matter. |
