<p><P>PROBLEM TO BE SOLVED: To reduce the concentration of furan contained in a coffee extract. <P>SOLUTION: A method for producing a furan-reduced coffee extract includes carrying out treatment with superheated steam of 110-200°C prior to obtaining a coffee extract from ground coffee beans by water extraction, liquefying obtained steam containing a volatile component, in a condenser with a cooling temperature of 30-90°C to obtain a liquefied product, and mixing the obtained liquefied product with a water extract obtained by water extraction. <P>COPYRIGHT: (C)2013,JPO&INPIT</p> |
