FIELD: food industry.SUBSTANCE: method envisages recipe components preparation, fresh ornamental cabbages chopping and freezing, trout and estragon greens cutting. The listed components are mixed with butter and salt. Then the prepared mixture and pomegranate juice are packed, sealed and sterilised.EFFECT: method allows to produce fish-and-vegetable preserves of trout with usage of non-traditional vegetal raw materials without the target product organoleptic properties modification. |
