FIELD: food industry.SUBSTANCE: invention relates to the field of food industry, in particular, to the technology of production of snack preserves. The method provides for preparation of formula components, cutting and frying of salted pork, chopping and freezing of fresh cabbage, cutting of herring fillet, mixing of listed components, mixing of acetic acid, sodium or potassium citrate, sugar, salt and black pepper to produce marinade, packing of produced mix and marinade, sealing and sterilisation. At the same time they use ornamental cabbage, and components are used at the following consumption ratio, wt parts: herring fillet 440; salted pork 137.5; ornamental cabbage 375; sugar 25.3; salt 30.3; sodium or potassium citrate 0.75; black pepper 5.1; acetic acid of 4% concentration - up to finished product yield of 1000.EFFECT: method makes it possible to produce new preserves using non-conventional vegetable stock without changes in organoleptic properties of a finished product. |
