FIELD: food industry.SUBSTANCE: invention is related to preservation industry. The method involves four-staged heating of preserves; one first performs heating in 80°C, 100°C water; then - in 120°C and 140°C calcium chloride solution during 5, 5, 5 and 20 minutes. Then one performs four-staged cooling first in 115°C calcium chloride solution and in 90°C, 65°C and 40-30°C water during 5, 7, 8 and 10 minutes without counter-pressure.EFFECT: method ensures the process duration reduction, quality improvement and saving of thermal energy, electric energy and water.1 ex |
