摘要 The present invention relates to a method for manufacturing Allium hookeri vinegar, comprising: a first step of fermenting alcohol by using steamed rice and yeast; and a second step of adding a vinegar starter to the fermented product in the first step and fermenting an acetic acid and thereby manufacturing Allium hookeri vinegar wherein Allium hookeri is further added in the first step and/or in the second step. According to the present invention, it is possible to manufacture Allium hookeri vinegar with functional improvements by usefully converting a large amount of functional materials contained in Allium hookeri through alcohol fermentation and acetic acid fermentation while boosting functional materials of vinegar without undermining fermentation efficiency.
