An apparatus for determining the water activity of a food product using electromagnetic spectroscopy comprises an electromagnetic signal generation and acquisition module 2 and a sensor 1. The sensor radiates the signals at the food product 4 and detects the resulting reflection or transmission signals, and the signal module 2 is configured to measure the detected signals. The apparatus can be used to determine the readiness of preserved meat products. In some embodiments the maximum power generated by the signal module is 1 Watt, and the minimum power may be 1 micro Watt. The apparatus may further comprise a data processing module for determining the water activity in the sample based on the measured signals, and a data storage module for storing said signals. The sensor may comprise a microwave or radio wave sensor, and may be a non-contact or non-destructive type. |
