<P>PROBLEM TO BE SOLVED: To provide a freeze-burn inhibitor for frozen noodles, and to provide frozen noodles prevented from freeze-burn using the same. <P>SOLUTION: The freeze-burn inhibitor for frozen noodles is provided, being characterized by including a kind of a fat and oil with its melting point ranging from ≥5°C and ≤30°C. A method for preventing frozen noodles from freeze-burn is also provided, being characterized by comprising: applying such a freeze-burn inhibitor described in either one of Claims 1 to 5 onto heat-treated noodles followed by freezing the noodles. <P>COPYRIGHT: (C)2013,JPO&INPIT |
