The invention relates generally to a process of manufacturing a dispersion for use as a dietary supplement. More specifically, the present invention relates to a process of preparing a shelf-stable dispersion comprising one or more omega-3 fatty acids, one or more edible oils, one or more minerals and, optionally, one or more viscosity modifying agents.
