PROBLEM TO BE SOLVED: To provide methods of lipid production using modified acyl-ACP thioesterase derived from alga.SOLUTION: Provided is a lipid production method comprising the steps of: obtaining a transformant by introducing a gene encoding a protein described below into a host; and collecting lipid from the obtained transformant, where the protein has an acyl-ACP thioesterase activity and has an amino acid sequence differing from a specified amino acid sequence by at least one amino acid substitution selected from the following (1) to (4): (1) glutamic acid at position 150 of the specified amino acid sequence is replaced by glycine; (2) asparagine at position 200 of the specified amino acid sequence is replaced by asparagic acid; (3) asparagine at position 222 of the specified amino acid sequence is replaced by serine or alanine; (4) arginine at position 245 of the specified amino acid sequence is replaced by lysine.
