The present invention relates to a method for producing fermented red ginseng by using a bioconversion technique. Provided are: a method for converting saponine into ginsenoside Rg3; a method for producing ginsenoside Rg3-righ fermented ginseng or fermented red ginseng; and a method for highly containing ginsenoside Rg3. According to the present invention, through a simple method using the bio-conversion technique, Rg3-rich fermented red ginseng can be easily produced. |
