摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing fermented soybean having strong stringiness and good taste, and improved in quality as a whole. <P>SOLUTION: The method for producing "soybean peptide-containing fermented soybean" comprises the following processes: a process of soaking raw material soybean in water; a process of steam-boiling the soaked soybeans obtained in the soaking process; a process of adding bacillus natto and a soybean peptide to the steam-boiled soybeans obtained in the steam-boiling process; and a process of fermenting the soybeans obtained in the addition process. The soybean peptide, preferably at 0.01-20.0 pts.wt., is added to 100 pts.wt. of the raw material soybeans.
