摘要 A method for preparing saccharified ginseng is provided to obtain the saccharified ginseng which is adequate for microorganism fermentation, shows excellent functionality and includes high content of acidic polysaccharides with excellent pharmacological activity. A method for preparing an extract of ginseng is provided to obtain the ginseng extract with high content of ginsenoside Rg3 and Delta20-ginsenoside Rg3. A method for preparing saccharified ginseng with increased acidic polysaccharide content comprises a step of treating ginseng with germinated malt, germinated rice bran or starch hydrolyzing enzyme, wherein the treatment is done by precipitating the ginseng in suspension at a temperature of 40-60 deg.C for 6-12 hours, the suspension obtained by suspending the germinated malt, germinated rice bran or starch hydrolyzing enzyme in water or an aqueous solution obtained by filtering or centrifuging the suspension. A method for preparing an extract of ginseng comprises the steps of: (a) fermenting the saccharified ginseng using lactic acid bacteria or enterobacteria with saponin hydrolyzing capability; and (b) ripening the cultured solution at a temperature of 50-85 deg.C for 4-12 hours.
