<P>PROBLEM TO BE SOLVED: To provide a palate feeling improver for noodles, giving better firmness, chewability and softness to noodles, and suitable especially for processed noodles which require no cooking when eating and are refrigerated and circulated, such as thin Japanese noodles, cold Chinese noodles, and soba served on a wicker platter. <P>SOLUTION: This palate feeling improver for noodles contains (1) a dry devil's tongue processed product which is prepared by mixing devil's tongue powder with starch, and (2) at least one kind selected from agar, alginic acid or its salt, xanthan gum, guar gum, curdlan, glucomannan, psyllium seed gum, native-type gellan gum, iota carrageenan, and kappa carrageenan. <P>COPYRIGHT: (C)2008,JPO&INPIT |
