In a process for cooking food, such as potato chips, doughnuts, batter, &c. in deep hot fat, cheese is introduced into the fat during cooking. The food is partly cooked in the fat, and particles of cheese are then added to the fat so as to adhere to the food, thereby coating it and impregnating it with the cheese flavour. The cheese is grated to medium fineness, and then exposed to the air to dry to the required extent, determined by testing in the hot fat. The cheese is sprinkled over the surface of the fat and stirred in with the fat and potato chips or other food. When cooked, the chips &c. are drained and seasoned with salt &c. |
