It is disclosed herein a rectangular in shape product composed of a plurality of parallel thin pastry sheets separated by layers of tough fatty substance. Preparation process: kneading of the dough composed of special materials in predetermined proportions, dividing of same dough into parts, shaping of thin pastry sheets spread with fatty substance, cutting of the resulted pastry sheets into pieces and superposing thereof in order to form a new product preservable in refrigeration conditions. Advantages: shaping of variable-thickness pastry sheets for preparing traditional pies and cream-filled pies (bougatsa), sheets preserved crispy and soft for many days even after refrigeration, provided that the pie is left uncovered. |
