NEW STARCH UTILIZING YEAST AND USE THEREOF

A starch utilizing yeast and use thereof are provided to directly perform alcohol fermentation from starch without a saccharification process, and improve alcohol production yield by enhancing resistance against ethanol and sugar of yeast. A starch utilizing yeast, Saccharomyces cerevisiae HA27(KACC 93045P) having ethanol and sugar resistance is isolated from Nuruk as malt for producing fermented liquor by culturing Nuruk on yeast malt extract agar medium at 28 deg.C for 24 hours, isolating colonies grown, culturing the colonies grown on starch agar medium at 30 deg.C for 5 days, isolating strains showing yellow circle around colonies, culturing isolated strains in medium containing high concentration of ethanol and sugar, respectively, and selecting a strain showing excellent growth.
