A machine for manufacturing instantly-packed whole bean curd and a manufacturing method thereof are provided to enhance the quality of the whole bean curd due to natural coagulation by making the mixture of cooled soybean milk, a coagulant, and enzyme, and then raising enzyme reaction in a constant-temperature water bath. In addition, the value of the whole bean curd product can be improved by hand-packing instantly. A machine for manufacturing instantly-packed whole bean curd comprises: a primary mixing tank(6) to which a soft water supply pipe(14) from water supply source(1) is connected, and which is equipped with a primary stirring device(6a); a steaming tank(7) which is connected to a raw soybean milk supply pipe(16) of the primary mixing tank and has a built-in steam injection pipe(7a); a steam generator(5) to which a steam-generating water supply pipe(22) and a steam supply pipe(15) are connected, and which has a built-in heater; a coagulant and enzyme mixing tank(8) after secondary cooling of soybean milk, which is connected to the steaming tank through a steamed soybean milk supply pipe, and which is equipped with a stirring device(8a), a cooling water jacket(9), and a discharge pipe for the mixture of soybean milk, a coagulant, and enzyme; a cooling water tank(13) for cooling instantly-packed whole bean curd, which includes a cooling pipe and a refrigerant compressor(13c), wherein the cooling pipe is connected to the cooling water jacket, a cooling water supply pipe, and a cooling water drain pipe; a natural coagulation tank(10) which is connected to the discharge pipe for the mixture of soybean milk, a coagulant, and enzyme, and which is a constant-temperature water bath with a built-in electric heating line capable of maintaining a constant temperature at 30~98°C; a hand cutter(11) capable of cutting the instant whole bean curd made in the natural coagulation tank by a fixed size; and a hand packer(12). |
